Packed with protein, healthy vegetables, and a savory sauce, this stir-fry is sure to become a new favourite in your recipe rotation.

Instructions:

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Place the block of tofu between two clean kitchen towels or paper towels, and place a heavy object on top (such as a cast-iron skillet or a stack of books). Let the tofu press for at least 15-20 minutes to ensure it’s well-drained.

Slice and Marinate the Tofu: Once the tofu has been pressed, slice it into cubes or rectangles, depending on your preference. In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, and grated ginger to create the marinade. Place the tofu cubes in a shallow dish or resealable plastic bag, and pour the marinade over the tofu. Allow the tofu to marinate for at least 15-20 minutes to absorb the flavours.

Prepare the Vegetables: While the tofu is marinating, prepare the vegetables. Wash and chop the bell pepper, broccoli florets, carrot, snow peas, and green onions as directed. You can customise the stir-fry with any additional vegetables you have on hand, such as mushrooms, snap peas, or baby corn.

Cook the Tofu: Heat a large skillet or wok over medium-high heat and add a drizzle of oil. Once the pan is hot, add the marinated tofu cubes in a single layer, making sure not to overcrowd the pan. Cook the tofu for 2-3 minutes per side, or until golden brown and crispy. Remove the tofu from the pan and set it aside.

Combine and Serve: Return the cooked tofu to the skillet with the stir-fried vegetables. Add the sliced green onions and toss everything together to combine. Cook for an additional minute to heat through.
