These Cherry, Almond & Greek Yoghurt Overnight Oats are packed with protein, fibre and slow-release carbohydrates to help keep you feeling fuller for longer. Fresh cherries add a naturally sweet flavour and are one of the few foods that naturally contain melatonin, making this a great recipe to enjoy as part of a healthy lifestyle.
Method
- In a large bowl, combine the rolled oats, Greek yoghurt, milk, chia seeds and vanilla extract. Stir well until everything is evenly mixed.
- Fold in half of the fresh cherries, reserving the remaining cherries for topping.
- If you prefer a little extra sweetness, stir in the honey at this stage.
- Divide the mixture between two jars or airtight containers and cover with a lid.
- Refrigerate overnight, or for at least 6 hours, allowing the oats to soften and absorb the liquid.
- Before serving, top with the remaining cherries, sprinkle over the flaked almonds and finish with a light dusting of cinnamon if desired.
