Instructions:

Prepare the Spinach: Start by rinsing the fresh spinach leaves under cold water and patting them dry with a paper towel. Roughly chop the spinach into smaller pieces.

Whisk the Egg Whites: In a mixing bowl, whisk together the egg whites until frothy and slightly foamy. Season with salt and pepper to taste.

Heat the Pan: Heat a non-stick skillet over medium heat and add the olive oil or coat the pan with cooking spray. Make sure the pan is well-heated before adding the egg whites to prevent sticking.
