Grilled Chicken and Vegetable Skewers
- 4 boneless, skinless chicken breasts, cut into chunks
- 2 red bell peppers, cut into chunks
- 2 green bell peppers, cut into chunks
- 2 courgettes (zucchini), cut into chunks
- 1 red onion, cut into chunks
- 16 cherry tomatoes
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 wooden skewers
Fire up your grill and create a mouthwatering dish with there grilled chicken and vegetable skewers. Tender chunks of marinated chicken are threaded onto wooden skewers along with a colourful medley of bell peppers, zucchini, red onion, and cherry tomatoes.

In a large bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the marinade.
