Recipe ingredients: Serves 4
- 1 Red Pepper, cut into 2 inch wide slices
- 1 Red Onion, cut into wedges
- 1 Courgette, sliced
- 2 medium Sweet Potato diced into 1 inch chunks
- 100g Feta Cheese
- 150g Cooked King Prawns
- 2 Tbsp Ground Cumin
- 1 Tbsp Ground Cinnamon
- 1 Tbsp Chill Powder
- Salt and Pepper to Taste

Method
Preheat oven to 200°C/180°C fan/gas mark 6 while chopping your vegetables
Pop the chopped sweet potatoes into a roasting tray and cover with a splash of oil. Toss the pieces to make sure they’re all covered and season with a bit of salt and pepper if desired. Roast in the oven for approx 15 minutes.
Meanwhile place into a bowl, the cumin, cinnamon and chilli and mix well. Cut the feta cheese into small chunks and place to one side.
Add the rest of the vegetables in the tray. Sprinkle on top 2 tbsps of seasoning and mix well to make sure all veggies are covered! * If your tray isn’t big enough, this may have to be spilt between two trays.*
Place back in the oven for a further 15-20 minutes.
During the last few minutes of roasting, lightly toss the king prawns in a tbsp of oil in a medium-hot frying pan with the remaining seasoning.
Plate up the vegetables, add the prawns and feta on top.
