Ingredients

  • 500g Greek yogurt
  • 2-3 tablespoons honey or maple syrup (adjust to your preferred level of sweetness)
  • 5ml (1 teaspoon) vanilla extract
  • Fresh berries (e.g., strawberries, blueberries, raspberries)
  • 2 sliced bananas
  • Chopped nuts (e.g., almonds, walnuts) – optional

Frozen Greek Yogurt Bark is a delightful and guilt-free treat that combines the creaminess of Greek yogurt with a burst of natural sweetness.

This frozen dessert is crafted by spreading a smooth layer of Greek yogurt onto a pan and then generously topping it with an array of colourful and flavourful ingredients such as fresh berries, nuts, and a drizzle of honey.

Once frozen, the result is a refreshing and satisfying bark that offers a perfect balance of creamy, tart, and sweet sensations. This wholesome indulgence not only makes for a delicious snack but also provides a nutritious alternative to traditional frozen treats, making it a delightful option for those seeking a cool and flavourful pick-me-up.

  1. In a bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Mix well until smooth and sweetened to your liking.
  2. Line a baking sheet or tray with baking paper.
  3. Pour the Greek yogurt mixture onto the baking paper and spread it evenly to your desired thickness (usually about 1/4 to 1/2 inch thick). You can create a rectangular or square shape.
  4. Top the Greek yogurt with fresh berries, sliced bananas, and chopped nuts, distributing them evenly across the surface.
  5. Carefully place the baking sheet or tray in the freezer.
  6. Freeze for at least 2-3 hours or until the yogurt bark is completely firm.
  7. Once frozen, remove the Greek yogurt bark from the freezer.
  8. Using a knife, break it into pieces of your desired size.
  9. Serve!
