Introduction
Are you looking for a nutritious and flavourful meal that’s as satisfying as it is easy to prepare?
Then these delicious Cottage Cheese Stuffed Peppers, packed with protein, vitamins, and minerals, these colorful peppers are for you!
Instructions:
Prepare the Peppers: Start by preheating your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes from inside. Rinse the peppers under cold water and pat them dry with a paper towel.
Make the Filling: In a mixing bowl, combine the cottage cheese, diced tomatoes, chopped fresh herbs, garlic powder, onion powder, salt, and pepper. Stir until all the ingredients are well combined.
Stuff the Peppers: Spoon the cottage cheese mixture into each bell pepper, filling them to the top. Press down gently to pack the filling into the peppers and ensure they are evenly filled.
Top with Cheese (Optional): If desired, sprinkle shredded mozzarella cheese over the top of each stuffed pepper for an extra cheesy finish.
Bake the Stuffed Peppers: Place the stuffed peppers in a baking dish or on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.
Serve and Enjoy: Once the stuffed peppers are cooked to perfection, remove them from the oven and let them cool slightly before serving. Garnish with additional chopped herbs, if desired, and serve hot.
You can add extra vegetables, such as diced onions, mushrooms, or spinach, to the cottage cheese filling for added flavour and nutrition. For a spicy kick, try adding a dash of hot sauce or crushed red pepper flakes to the filling mixture.
