Vietnamese Spring Rolls

Makes 12
500g Turkey Mince
2 Shallots – Finely Sliced
2 Tbsp Sweet Chilli Sauce
1 ½ Tbsp Fish Sauce
1 Garlic Clove – Minced
1 Lime – Zested and Juiced
½ Lemon – Zested and Juiced
¼ Cup Fresh Mint Leaves – Shredded
2 Cups Iceberg Lettuce – Finely Sliced
12 Round Rice Paper Sheets
Mixed Salad Leaves – To Serve
Cook the turkey mince in a pan until cooked through. Place into a glass bowl.
Add shallots, sweet chilli sauce, fish sauce, garlic, lime, lemon and mint leaves into bowl, and mix until well combined.
Fill another large glass bowl with warm water. Place 1 wrap into the warm water for approximately 30 seconds. Remove wrap from water and place onto a damp tea towel. Add approximately 2 tablespoons of mince filling, and a small amount of lettuce. Fold the wrap as shown below, as tightly as possible. Repeat until all ingredients have been used.
Serve with sweet chilli sauce.
