- 200g Firm Tofu (naked or smoked)
- 1 Tbsp Turmeric
- 1/2 Tbsp Smoked Paprika
- 1 Vegetable Stock Cube
- Salt and Pepper to Taste

Tofu is an excellent source of nutrients, minerals, and protein – containing all nine vital amino acids. Pretty good huh!
Method
It doesn’t matter whether you get smoked or naked tofu. This recipe suits both.
Remove the tofu from its the packaging whole. Don’t have to worry about pressing it as we will cook out some of the moisture anyway. Using just your hands, crumble it into a bowl. The aim is the imitate scrambled egg consistency so a mixture of crumble sizes is good!
Now let’s make the flavouring..
Drop the vegetable stock cube into approx 150ml of boiling water and stir until fully dissolved. Take the turmeric, salt and pepper and stir into the stock.
Add the tofu to a medium-high heat frying pan. You don’t need to add oil to the pan because the tofu already has a lot of moisture. This saves on quite a few easily dismissed calories!
Add the flavouring to the pan and stir.
Make sure all the tofu is covered. Allow it to sit for 3-4 minutes simmering some of the moisture away and letting the tofu soak the flavour.
Cook for a further 3-5 minutes stirring regularly.
The consistency should be similar to that of scrambled egg, so once you’re satisfied with the texture, removed from the heat and serve! We recommended enjoying this with smashed avocado on toast! Yum!
