Recipe ingredients: Serves 4
- 3 eggs
- 2 soft wholewheat tortillas
- 2 tbsp skimmed milk/non-dairy milk
- 1 tomato finely chopped
- 1 spring onions finely chopped
- 1 pinch black pepper
- 2 loose handfuls of baby spinach
- 1⁄2 red, orange, or yellow bell pepper deseeded & chopped
- 1 tsp oil (olive, rapeseed, hemp seed or spray oil)
- 20g low fat grated cheddar cheese

Who says breakfast has to be in a bowl or fried to be both hearty and tasty? This breakfast burrito packs a punch when it comes to protein and will fill you up to start your day in the best possible way.
Method
1. Mix together eggs & milk
2. Heat 1⁄2 tsp oil in a pan, & pour in 1⁄4 egg mixture
3. Cook the egg then put it onto a tortilla
4. Mix the tomato, onions, pepper & black pepper together
5. Put 1⁄4 of this on top of the egg, then add 10g cheese on top
6. Grill this to melt the cheese
7. Place 1 handful of baby spinach on top
8. Roll the tortilla, then cut it in half
9. Repeat all steps to make the other burrito
10. Enjoy!
