Fresh, colourful, and packed with flavour, this Grilled Halloumi & Summer Vegetable Salad is the perfect meal for warmer days. Combining crisp vegetables, grilled halloumi, and a light lemon dressing, it’s a simple yet satisfying dish that’s ideal for lunch, dinner, or even a summer barbecue.
Method
- Heat a non-stick griddle or frying pan over a medium-high heat.
- Grill the halloumi slices for 2–3 minutes on each side until golden brown.
- Meanwhile, arrange the salad leaves, tomatoes, cucumber, pepper, red onion and avocado in a large serving bowl.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard and honey to create a light dressing.
- Place the warm grilled halloumi on top of the salad, drizzle over the dressing and finish with freshly chopped basil or parsley and a little black pepper.
Serve immediately and enjoy with wholegrain bread if you’d like a more substantial meal.
