  • 200g cooked quinoa
  • 100g black beans, drained and rinsed
  • 60g bell pepper (any colour), diced
  • 60g cucumber, diced
  • 15g red onion, finely chopped
  • 8g fresh coriander, chopped
  • 30ml lime juice
  • 15ml olive oil
  • 1.25 grams cumin
  • Salt and pepper to taste

In a large bowl, combine cooked quinoa, black beans, bell peppers, cucumber, and red onion.

In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper to make the dressing.

Pour the dressing over the quinoa mixture and toss to combine.

Stir in fresh coriander before serving.
