Low Carb Grilled Mackerel with Light Potato Salad

Recipe ingredients: Serves 2

  • 2 fresh or kiln roasted ready to eat mackerel
  • 190g new potatoes such as Baby Jersey Royal, halved
  • 150g tinned mixed beans, drained, rinsed
  • 50g cucumber peeled & cut into cubes
  • 1⁄2 bunch radishes (100g), sliced
  • 1⁄2 small red onion, finely sliced & peeled
  • 1⁄2 tbsp dill
  • 2 tbsp light mayonnaise
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • Mixed herbs, to taste
  • Black pepper, to taste

Recipe prep & method

A fabulous meal, this deliciously satisfying mackerel recipe gives you a great serving of your essential fatty acids and don’t forget the fibre the mixed beans bring to the table.  This hearty lunch provides 3 of your 5 a day too!

1. Boil or steam the potatoes until they are cooked
2. Drain potatoes & toss with the beans, cucumber, radishes, & red onions
3. Mix the mayonnaise, mustard, dill & 1⁄2 of the lemon juice in a bowl
4. Preheat the grill, position the grill rack in the centre of the grill
5. Use the remaining lemon juice to brush onto the mackerel, sprinkle with, pepper & mixed herbs
6. Place under the grill for 4-5 minutes on each side until the flesh flakes easily
7. Serve the mackerel with the potato salad and enjoy
